pasta with avocado 'cream' sauce.

i love avocado. i love it on sandwiches, in salads, on top of soups or rice. it is seriously one of my favorite super foods. so when i saw this recipe, i was pumped to try it! i was going dairy-free for a couple of weeks to see if it would help with lincoln's acid reflux so this quick, easy meal was perfect for a busy weeknight. loved it!

pasta with avocado "cream" sauce:


1 medium ripe avocado, pitted 
1/2 lemon, juiced
2 garlic cloves
1/2 tsp kosher salt  
1/4 cup fresh basil, chopped
2 tbsp extra virgin olive oil
2 servings, 6 oz. of  your choice of pasta
freshly ground pepper to taste


1. bring several cups of water to a boil and cook your pasta according to package directions.
2. meanwhile, in a food processor, place your garlic cloves, lemon juice and olive oil and blend until smooth. then add in your pitted avocado, basil and salt. process until smooth and creamy.
3. when pasta is done cooking, drain in strainer and place in a large bowl. pour sauce on the pasta and toss until completely combined. garnish with ground pepper & serve immediately.
